He capitalized on a loose ball in the box, striking it past goalkeeper Kjell Scherpen to extend Atletico's lead to 2-0.
Prior to Gallagher's goal, former Manchester City striker Julian Alvarez had opened the scoring for Atletico in the 39th minute, netting his second Champions League goal of the season.
Union Saint-Gilloise managed to reduce the deficit when former Accrington Stanley defender Ross Sykes headed the ball past Jan Oblak with ten minutes left in the match.
However, substitute Marcos Llorente sealed the victory for Atletico with a goal in the 96th minute, marking his third goal in this year's competition.
